Italian Sausage and Sweet Potatoes

Yield: 4-6 servings

Ingredients:

• 1 lb. Italian Sausage
• 2 medium Sweet potatoes
• Egg plant
• 1 large onion
• 1 zuchini
• I can tomatoes
• 1 large pepper

Directions:

1. Remove skin from sausage.
2. In cast iron skillet, cook sausage.
3. Add onions.
4. Add sweet potatoes.
5. Add peppers,
6. Add zuchini.
7. Add tomatoes.
8. Cook until tender.
